Rockchickee - wheat and dairy are the two most common foods that we humans react to - I became intolerant to them roundabout my late 30's - early 40's, so for years I was in a wilderness regarding the bread thing too, cos the gluten free bread that was available at that time was soooo bad, it was better to eat cardboard!!!
But then halleluiah, someone invented a gluten free bread that is truly yummy, and can be eaten either toasted -or not - as you wish. I recommend two types - a seeded loaf with the brand name of GENIUS, and ciabatta rolls with the brand name of DS (Dr Schar ltd). I buy both of these from Tesco, found on their 'Free From' shelves.....of which you can also find gluten free pasta etc.
Yes, they are expensive compared to the usual brands, but better that than feeling grotty - and I'm right with you there on how that feels... I certainly never want to feel that bad again!!!
RC it's possible to buy gluten free bread mixes as well, and make your own. Or if you have a bread making machine you can do your own GF bread in that....keeps the cost down a bit.
I haven't tried them myself but working at "the home of creative kitchenware", I know many customers swear by them
Also if you get it diagnosed by the quack I think you can get prescription assistance with buying GF essential food
