Having managed a real ale pub, albeit many years ago, I found that catering for several different clientelle types helped maximise turnover throughout the week. Obviously it will depend on your actual location but I had mainly business/ office staff at lunchtime, locals early and late evenings and weekends, students mid evening and visitors as and when. I had field workers early evenings aswell.. I also borrowed the clientele from a nearby biker pub on an adhoc basis but I used to drink with them previously.

You may be better off asking your existing customers what they want rather than trying to impose the Events you think they'll want. Assuming you're doing food stick to good value for money and plentiful rather than going upmarket to appeal to a wider audience.

Good people, good food, good music and let the biker community do the rest. Pretty much that simple for me.

If you were to do the music at weekends, maybe for the week nights, have different bike clubs or types, like adventure, sports, custom, classic etc.? Maybe there are some local bike clubs around that you could approach to get a steer? Either way, I wish you the best of luck 👍

Make it clear, from the outset, that you are not going to be affiliated to back patch clubs.
Will you be free hold, leasehold or tennant?
As free hold you need feet through the door in order to pay rates and utilities. You will have the freedom to choose where you get your beer from.
As leasehold, you will probably be tied to a brewery for your beer. Not so much of a problem but you will have to negotiate good terms over the rest of your sales.
As a tennant, you are screwed! You might get a good short-termed tennancy with a peppercorn rent, after that you will be screwed over rent and where you get your drinks from.
Depending on the location of your premises, will determine who will be frequenting your establishment. Hosting music nights, disco or live bands will be reliant on local council regulations and also noise regs. Having the right PPL and PRS licences can be a minefield. Keeping a good cellar is imperavtive. If your pipes aren't clean your beer will be shit. Shit beer equals no customers. I prefered doing my pipes on Thursday night and Monday night.
Pubs tend to do well if they can front the usual games teams, how many bikers play 5&3's and old game these days? How many bikers play cribage these days??? Pool and darts teams are good, especially if the after game refreshments are up to scratch. I found faggot and peas with a bucket full of chips with plenty of salt always went down quite well.
The size of the pub and security of the parking will also be a factor. Remember, the police don't look kindly on bikers and alcohol. That being said, are you going to be hosting a lot of bikers during the week? Is it town centre or edge of town positioning? Then you have the posibility of developing a relationship with a taxi firm so riders don't have to run the gauntlet of having a drink or riding legally. Do you have the facility to park bikes securely overnight if riders have one too many?
The licensed trade is suffering big time at the moment, look at how many pubs are shutting per week.
I could go on but I don't want to dampen your enthusiasm. Best of luck in your endeavours and I wish you the greatest success.
Oh yes, be prepared for many late nights. Depending on your regulars, they might expect a lock-in on friday and saturday nights. My last pub was just off the town centre, same faces almost every night and always expected a couple of pints after hours, not a problem. Be aware of those that come in just before last orders expecting a late drink, they will be bastards to get out when you have had enough.
