Gonna try that one tomorrow Cattykins, hey you see the topping? Is that just the eggs and milk mixed together? Would you need to make that quite thick so it is a topping? Cheers xx


I have a great wee recipe for easy muffins (ooer missus lol ) I will post it on here later this aft when I get more time....

Brazilian Fejoida. Vegetarians, Muslims and Jews please look the other way



Ingredients




Packet of black beans (Tesco sell them as Black Turtle Beans)


500g Diced pork. A cheap cut like shoulder will do


250g Chopped bacon, smoked or unsmoked.


250g Spicy sausage. I used Aldi's Chorizo, two packets.


1 packet Schwarz Chile Con Carne spice powder (not the extra hot stuff)


1 Ham hock. It's a cheap cut, and you may find it better to go to a market stall. Uncooked about 1 kilo, and £2 in a market stall.






Method


Soak half the beans overnight in water, and keep the other half for the next batch.
Put the soaked beans, diced pork, bacon and spicy sausage in a casserole and cover with water and add the spice mixture. Place the ham hock on top, cover and bring to the boil. Simmer gently until the meat is falling off the bone of the ham hock. This will be about 3-4 hours in a casserole, or 60-90 minutes in a pressure cooker.
Remove the ham hock and strip the meat off the bone. Discard as much skin and fat as you can and then return the meat to the casserole.
Serve with boiled rice and garnish with sliced oranges. For the authentic South America touch, open a bottle of cachaca, the standard-issue Brazilian fire water.


If you follow the recipe exactly the resulting casserole will be quite salty - it's meant to be The culprit doesn't seem to be the ham as first suspected, so maybe it's the chorizo or the spice mixture. Either way, keep on experimenting - a Google search will throw up loads of variations.

Cheers Cat, yeah I was just worried that it would all soak into the mince too much and not rise up, class one, will make that tomorrow for dinner let you know how it turns out


Here's my easy peasy muffins recipe.


You need a proper deep muffin tin to do these in... recipe makes around 8 to 12 depending how big or deep you want them


5 ozs S/R Flour
2 ozs caster sugar
2 ozs melted butter
4 fl ozs milk
half tsp baking powder
1 egg


Mix all above ingreds together in large bowl, add in whatever order you wish, no need to stir thoroughly.
Then add all your extras


Vanilla Extract (tiny couple drops for flavour)
Nuts
Blueberries
Glace Cherries
Choc Chips
Nutmeg (pinch)
Cinnamon (pinch)
Banana (medium and mashed)


and whatever else takes your fancy...


if you want choc muffins add cocoa powder (1-2 dessertspns or more)


Mix all up then spoon into each muffin paper case in trays, make them as big or small as you wish!


Bake for 12-15 mins at approx 175-180c

Wills your recipe looks delish too think I will try that at weekend, what is cachaca? Is it a whiskey? Do you think a nice cold beer would go with it too?

Cachaca is a distilled Brazilian spirit that will take the skin off your teeth and comes in a bottle with a crown cork, so once opened you've got to finish it Nearest common equivalent might be a white rum, but I'd prefer a cold beer any day!

Flour 90
Muscovado sugar 50
Baking powder 5
Milk 65
Dates 100 Finley chopped
Butter 25 melted
Vanilla 1 tsp
Egg yolk 1
Muscovado 100
Butter bits 15
Boiling water 250. +treacle 2tbs

Oven 180c
Buttered casserole dish
Sift flour and sugar in a large bowl.
Add butter, vanilla and milk to a bowl
Microwave until just warm enough to melt butter,,,,,,,,,
Beat in the egg yolk.
Add the beaten mixture to the flour/sugar and combine with a wooden spoon.
Fold in the chopped dates,,,,
Place mixture into a casserole dish .
Sprinkle Muscovado sugar over the mixture ,,,, add the butter pieces,,,
Carefully pour In the boiling water and treacle over a spoon,,,,,,

Place in the preheated oven for 40 mins.
Pudding will be springy when cooked


This is a complete Sticky Toffee Pudding. The pudding will rise up through the sauce.
It is an absolute doddle to make and always makes a first class pud

I'm loathe to try Dustin's recipe as I know I will sit and eat most of it in one go once it is made hahahaha it looks really tempting to try though x

100 GRAMS bugger lugs.
That sticky recipe is the easiest ever coz the sauce and pudding are cooked as one.
Try it , you'll love it .
It can be used as part of a calorie controlled diet providing you just sniff it . Lol

Tried the sniffing of grub to satisfy the appetite Dustin ... alas it don't work, I could always be nice and give some to my wee neighbour (not) ah well I will go for an extra long walk after the pud x

Lazy Biker's Winter Warmer

Ingredients:

4 slices of bread
1 tin of Heinz Baked Beans
1 bottle of Encona Hot Pepper Sauce

Method:

Toast bread, butter it, put toast on plate
Put beans in pan and pour in 'some' Hot Pepper Sauce, cook
When cooked, pour beans over toast

Eat.
